A sophisticated retreat in foothills outside Grasse, the 18th-century Bastide Saint Mathieu is the pet project of professional hoteliers, Inge and Arie van Osch. They have lavished love and care on its conversion, at pains to find just the right lamp, mirror, painted chest or cashmere blankets. The furniture is a happy mix of antique and contemporary. The result is a luxurious small hotel, well designed and strikingly decorated, with the feel of an exclusive private house.
Of the original features, there's a sprinkling of beams, occasional stone walls and fireplaces, which contrast with some bold colour schemes. Even the smallest bedroom is the size of a junior suite in most other hotels. Also a lovely pool in gardens full of the scents of Provence.

Breakfast is as late as you like. There's no restaurant, but the owners are happy to recommend nearby eateries.
